Chef's Pantry: Chilli Oil

Have you wondered what secrets lie behind the closed curtains of the kitchens? Or, how in the world can some simple ingredients taste out of this world? Well, that is what the Chef's Pantry is about! Here, we divulge a few chosen tricks up the sleeves of every chef out there to make your life in the kitchen a little more fun!


On the menu this week, among the many pataaka sauces being sold, we have a chef's special. This is one sauce which is versatile, but isn't actually a sauce. Its something simpler, something so simple, you'd ask why should it be bought? Chilli Oil - an oil which enhances its flavour the more it is infused.


Here are my Favourite ways to use them:

  • Potsticker Dips: Have it in your armada of dips, and whenever you order your momos/ dumplings/ potstickers, simply mix and drizzle the oil and serve! (Or eat) The oil works wonderfully with simple Chinese stir fries, Noodles, Pad Thai, or even Fried Rice.


  • Anything Indian: Make your favourite Dal, Paneer ki Subzi, Butter Chicken and just before serving, uplift it by a drizzle of the oil to serve it restaurant style! Sprinkle it on your dosas while they are sizzling away on the tawa. Indian Food never looked so good.


  • Salads & Soups: Now, While salads seem like an exeptionally easy meal to prepare, and an equally boring meal to eat, they can be quite exciting too! Jazz your salads up with some herbs, olives, tomatoes, onions, feta cheese e and of course this Chilli Oil ( add lemon, salt and pepper) Toss it up and enjoy! Dress your soups up (packeted or homemade) with a couple of teaspoons of this! ( My personal favourite is adding it in a big hot steaming bowl of Khousuey)


  • Meat Marinades: Have that favourite steak of Fish, but can't figure out how to make it irresistible? Grilled Chicken too boring for you? Need a quick fix to sauté up some prawns? All you have to do is mix the oil with some lemon juice, salt, pepper and chopped herbs and a little white wine. Marinade your meat in this mix, heat a pan really hot and pan fry it! Simple, yum, excellent.

( For Vegetarians, Try the same with some beans, potatoes, paneer, tofu, Broccoli, or Cauliflower. Give the Non- vegetarians a run for their money.)


Go crazy and mix and match to create your own amazing dishes. Cooking, after all is an art as much as it is a science. So, go crazy, instagram it, and tag us. Chilli Oil can be substituted with your regular oil for cooking, but is ideal if you drizzle it at the end. Keep refridgerated, and the oil can last you for 6 months to a year.
